“Chablis is very specific. Here we’ve found a wine that is thrillingly focused, mineral, concentrated and pithy. It drinks like coastal wine, but a British coast – wild, beautiful, gusty, stirring. This drags me out from my urbane London lair to somewhere bracing and expansive, somewhere deeply exciting. This is perfect wine to take on an adventurous picnic with which to reconnect with the elements.

A wine’s capacity to evoke memories is something I value profoundly and though I’ve had many great experiences wandering through creeping vineyards, and tastings in ancient cellars, it doesn’t mean that the winery is the only place I expect a wine to draw me to. What I love about this wine is that once you taste it, you start finding little subtleties in each sip.”

Ah, Chablis. Cool Chablis. Crisp Chablis. Chilled citrus, pear and white-flower Chablis. This is a wine with enduring appeal, described as 'the quintessential expression of Chardonnay.' Our winemakers in Meursault, in the Bourgogne-Franche-Comté region of France, harvest grapes from their unique vineyards. Their terroir consists of exogyrious marls which originated from the Kimmeridgian era, in the late-Jurassic age. Ey? Huh? Well, the Ropiteau Brothers tell us that this means their land is made up of small oysters that once lived there when the sea covered the area, but were fossilized when the sea withdrew. It's this oyster boneyard which gives the wines their palpable minerality and sharpness. Once harvested, the Chardonnay grapes are pressed gently in a pneumatic press, allowing for a better extraction of the juice and reducing the risk of oxidation. The Ropiteau Brothers sure do know their stuff. And so must we for working with them.
